Breakfast Recipes: Berry Biscotti Cream Parfait
Berries and creamy yogurt are delicious and good for you. Add crushed biscotti cookies, and it’s dessert.

1 1/2 cups yogurt, preferrably Greek
1 cup ricotta cheese
1/4 cup powdered sugar
1 teaspoon vanilla extract, or Almond extract
2 cups fresh berries, mixed (strawberry, raspberry, blueberry)*
1/2 cup biscotti cookies, crushed
In a bowl combine yogurt, ricotta, sugar and extract; mix well.
In four wine or parfait style glasses layer: 1/4 cup yogurt mixture, 1/4 cup berries and 2 Tbsp biscotti crumbs. Repeat layer. Repeat with remaining glasses. Top each parfait with 1 Tbsp yogurt mixture and refrigerate until ready to serve.
